Baked Spiced Blood Orange & Pear Oatmeal

INGREDIENTS
- Rolled oats
- Milk (dairy or plant-based)
- Eggs (or ground flaxseed if making a flax egg)
- Maple syrup or honey
- Vanilla extract
- Pear
- Blood orange (or orange)
- Lemon
- Cinnamon
- Cardamom
- Ground ginger
- Baking powder
- Salt
- Pistachios
- Greek yogurt (to serve)
METHOD
Step 1: Heat the oven + prep the dish
Heat oven to 180°C. Grease a small baking dish.
Step 2: Mix dry
- 1 cup rolled oats
- 1/2 tsp cinnamon
- 1/4 tsp cardamom
- Pinch ground ginger
- 1/4 tsp baking powder
- Pinch salt
Stir together in a bowl.
Step 3: Mix wet
- 1 cup milk (dairy or plant-based)
- 1 egg (or flax egg)
- 2 tbsp maple syrup or honey
- 1 tsp vanilla extract
Whisk until smooth.
Step 4: Prep the fruit
- 1 ripe pear, thinly sliced
- 1 tsp lemon juice
- 1/2 blood orange (or orange), segmented
- Zest of 1/2 orange
Sauté pear slices with 1 tsp butter or coconut oil + lemon juice for 2 to 3 min.
Step 5: Assemble
Stir wet into dry, plus half the orange zest. Pour into dish. Top with pears, orange segments, remaining zest, and pistachios.
Step 6: Bake + serve
Bake 30 to 35 min until set. Cool 5 min and serve with Greek yogurt.
NOTES
- This reheats well. Cover and chill, then warm in the oven or microwave.
- For extra richness, add a spoon of tahini or almond butter on top when serving.
