Broccoli, Blueberry & Goat Cheese Galette

A crisp puff-pastry galette with charred broccoli, tangy goat cheese, and bright blueberries.

Broccoli, Blueberry & Goat Cheese Galette

INGREDIENTS

  • 1sheet puff pastry (very thin if possible)
  • 1small broccoli
  • 100 gsoft goat cheese
  • 1 tbspcrème fraîche, yogurt, or a little cream
  • 100 gblueberries
  • 1 to 2 tsphoney
  • 2 tbsphazelnuts or almonds, toasted and roughly chopped
  • 1 tbspolive oil
  • 1 tspsugar
  • A few small basil leaves or a little thyme
  • Salt
  • Black pepper

METHOD

  1. Step 1: Heat the oven

    Set oven to 210°C. Line a tray with baking paper.

  2. Step 2: Roast the broccoli

    Cut the broccoli into very small florets. If the stem is tender, peel and slice it thinly. Toss with:

    • Olive oil
    • A pinch of salt
    • 1/2 tsp honey

    Roast for 10 to 12 minutes, until tender and a little charred at the edges. Keep it fairly dry.

  3. Step 3: Bake the pastry

    Put the puff pastry on the tray. Score a border about 1 cm in from the edge. Prick the center all over with a fork. Sprinkle the border with the 1 tsp sugar. Bake for 12 to 18 minutes, until crisp and deeply golden. If the middle rises too much, press it down gently while warm.

  4. Step 4: Make the goat cheese mixture

    Mix:

    • Goat cheese
    • Crème fraîche or yogurt
    • Pinch of salt
    • Black pepper
    • 1/2 tsp honey

    It should be smooth enough to spread in a thin layer.

  5. Step 5: Prepare the blueberries

    Blend most of the blueberries, keeping 6–7 whole berries aside.

  6. Step 6: Assemble

    Spread the goat cheese mixture thinly over the warm pastry. Add small spoonfuls of blended blueberries and a few whole berries. Top with the roasted broccoli. Finish with:

    • Toasted nuts
    • Basil or thyme
    • Black pepper
    • A very light drizzle of honey
  7. Step 7: Serve

    Serve warm or just at room temperature.

NOTES

  • Keep the blueberries restrained. They should taste like a bright, sharp accent, not a full fruit tart.
  • If your puff pastry is thick, roll it out a bit thinner for a cleaner, crisper result.
  • This is best the day you make it; reheat on a tray in a hot oven to re-crisp the pastry.
