Easy Miso-Maple Salmon
My fav recipe for easy weeknight salmon. It’s salty-sweet, takes basically no time, and you can make it no matter how tired you are.

INGREDIENTS
- 4salmon fillets (about 170 g each), skin-on if possible
- Kosher salt
- Freshly ground black pepper
- 4 tspmaple syrup
- 1 tbspwhite or brown miso
- 1 tbsprice wine vinegar
- 2 tspsoy sauce
- 1garlic clove, grated
- Cilantro (optional, for serving)
- 1lime (optional, for serving)
- Flaky sea salt (optional, for finishing)
- Rice (optional, to serve)
METHOD
Step 1: Heat the oven
Heat the oven to 200°C (400°F). Line a sheet pan with parchment paper or foil.
Step 2: Season the salmon
Season the salmon well with salt and black pepper. Place on a plate or in a large shallow bowl.
Step 3: Make the miso-maple glaze
In a small bowl, whisk together:
- 4 teaspoons maple syrup
- 1 tablespoon miso
- 1 tablespoon rice wine vinegar
- 2 teaspoons soy sauce
- 1 grated garlic clove
Step 4: Glaze and bake
Pour the glaze over the salmon and gently massage it all over. Let it sit while the oven finishes heating. Arrange the salmon skin-side down on the sheet pan. Bake until opaque and cooked through, about 12 minutes (a bit longer if your fillets are thicker).
Step 5: Finish and serve
Right before serving, top with cilantro and a squeeze of lime, if using. Season with flaky sea salt. Serve with rice if desired. I used potatoes and broccolini.
NOTES
- If the salmon is very thin, start checking at 9-10 minutes.
- If you want more caramelization, switch to broil for the last 30-60 seconds, but keep a close eye on it so the glaze doesn’t burn.
