Hot Honey Chicken with Broccolini

Juicy oven-roasted chicken is brushed with hot butter, honey, and fresh lime, then served with simply cooked broccolini for a bold, balanced dish that feels both comforting and fresh.

Hot Honey Chicken with Broccolini

INGREDIENTS

  • 1.3 kg(3 lb) chicken, skin-on (any cut works; thighs are especially good)
  • Salt and black pepper
  • ½ tsponion powder
  • ½ tspgarlic powder
  • 2 tbspbutter, melted
  • 2 tbsphot sauce
  • 2 tbspmild honey
  • 1lime
  • 1bunch broccolini
  • Sesame oil

METHOD

  1. Step 1: Roast the chicken

    • 1.3 kg (3 lb) chicken, skin-on or skinless
    • Salt
    • Black pepper
    • ½ teaspoon onion powder
    • ½ teaspoon garlic powder

    Heat the oven to 230°C (450°F). Line a rimmed baking sheet with foil. Season the chicken generously on all sides with salt, pepper, onion powder, and garlic powder. Arrange skin side up on the baking sheet and roast until the skin begins to brown and render, about 20 minutes.

  2. Step 2: Brush with hot butter

    • 2 tablespoons butter, melted
    • 2 tablespoons hot sauce

    While the chicken roasts, whisk together the melted butter and hot sauce. Transfer half of the mixture to a separate bowl and set aside. After 20 minutes, brush the chicken generously with the remaining butter–hot sauce mixture. Return to the oven and roast for another 10 to 15 minutes, until deeply golden and cooked through.

  3. Step 3: Finish with honey and lime

    • 2 tablespoons mild honey
    • 1 lime (zest and juice)

    Zest the lime, then cut it in half. Add the honey and 1 teaspoon lime zest to the reserved butter–hot sauce mixture and whisk to combine. Remove the chicken from the oven. Brush with the honey mixture and squeeze fresh lime juice over the top. Serve immediately, while glossy and hot.

NOTES

  • Skin-on chicken will give you the best texture, but skinless works well if you prefer it lighter.
  • Use a mild honey to keep the balance right; the heat should come from the sauce, not the sweetness.
  • The broccolini is intentionally simple—it’s there to refresh the plate, not compete.
